I cannot get enough of smoothies lately! They are just so easy to make yet totally customizable and delicious. I had a delicious fresh pineapple on hand plus some unsweetened coconut flakes so I decided to whip up this piña colada green smoothie for Adalyn and I.

The morning that I made this, it was just Adalyn and I around and I was a little bit nervous about her grabbing the smoothie or extra ingredients before I was done photographing it. One time, she took a huge handful of spiralized vegetables covered in a peanut sauce and jammed it into her mouth- I had only taken like 2 pictures at that point!!

Well, I was wrong as I am often in parenting. Just when you think something is going to go one way, it happens a totally different way. Adalyn was the best assistant ever for this recipe. She added the banana, the protein and pressed the start button on the blender. I couldn't have done it without her ; ).

Then she patiently watched me as I took the photos and even carried some of the ingredients over to my photo station for me. I could not believe it! She was so patient- she just wanted to drink the smoothie so she was trying to be good haha. After I was done taking the photos, she grabbed a handful of baby spinach from the bag and added it to the smoothie saying that it needed "more salad". She must have been right- I need to trust my assistant more! Of course she loved the smoothie and wanted more after she got done drinking it. Smart girl!

This Piña Colada Green Smoothie is nutritious and is packed with fresh baby spinach, frozen bananas, fresh pineapple (though frozen would work), coconut, milk and a new-to-me protein powder. It is awesome for breakfast or for a snack. Enjoy!

Piña Colada Green Smoothie

Prep Time: 2 minutes
Servings: 1

Ingredients

  • 1 medium frozen banana
  • 1/2 cup fresh pineapple
  • 1 cup baby spinach
  • 1 cup milk
  • 1 tablespoon unsweetened shredded coconut + more for topping
  • 1 scoop Purely Inspired Whey Protein and Greens French Vanilla

Instructions

Blend all ingredients together. Top with extra shredded coconut as desired.
