This year, I'm finally admitting it to myself: I am not the hugest pumpkin spice fan. I used to be obsessed but now, it doesn't excite me like it used to. Instead, I'm am loving lots of other fall foods and drinks such as doughnuts and cider, fall salads, homemade chili and more. It it really fun to make all things fall and enjoy each season that comes along.

One day, I was sitting at my computer trying to think of a fun fall recipe to make and this salad came to me. I had just bought a bag of small pomegranates, had a bunch of apple cider in my fridge and a million fresh orchard apples that we had recently picked, a huge bag of kale and a block of cheddar cheese. This salad came to me and I knew that it would be perfect for fall.

It is super easy to make and can be made the day before because kale is very hearty and will not wilt. Don't skip the massaging step because it helps to soften the kale making it easier to eat. You can feel free to add your favorite protein as well such as baked or grilled chicken to make it a complete meal.

Kale Salad with Pomegranate, Cheddar and Apples

Servings: 4
Prep time: 10 minutes

Ingredients: 

8 cups kale, chopped
1 cup pomegranate arils
1/3 cup cheddar cheese, chopped
1 large honeycrisp apple, sliced

Apple Cider Vinaigrette
  • 1/4 cup apple cider
  • 1/4 cup apple cider vinegar
  • 1/3 cup olive oil
  • 1/2 teaspoon black pepper

Instructions:

1. In a large bowl, massage kale with your hands for about 2 minutes until kale is softened.
2. Add the rest of the ingredients into the bowl for the salad and mix well.
3. Whisk all ingredients together for vinaigrette and pour over salad.
Enjoy!
