I first made hash brown waffles a few months ago wanting to test out if they really worked. I was thinking that they wouldn't really stick together and that they would make a big mess in my waffle iron but the idea sounded so unique that I wanted to give it a try. I was definitely wrong and they turned out amazing. I knew that I had to share the recipe with you all!

For this recipe, you can use frozen hash browns that are defrosted or you can shred your own potatoes or even use sweet potatoes. To keep things simple, I used frozen hash browns that I defrosted. I also used sharp cheddar cheese for this recipe but you can feel free to use whatever kind of cheese you like.

I topped mine with a fried egg which helps to make it a complete meal- just pair with a side salad or some fruit. These waffles have a lot of flavor but you can feel free to add even more: spices that would be great would be chili powder and cumin for a Mexican flair. Or you could add chopped up bacon and chives- yum!

You can make these for breakfast of course but they also make a great breakfast-for-dinner option as well. My husband and I couldn't get enough of these waffles and have enjoyed making them as an easy dinner idea.

I cannot get over how easy they are yet how delicious they taste. I want to keep experimenting with these and maybe try some sweet potato hash brown waffles as well. They would be perfect for a brunch too. Serve with fruit, bacon, coffee, a fried egg, etc.

prep time: 5 MINScook time: 10 MINStotal time: 15 mins

INGREDIENTS

  • 4 cups shredded frozen hashbrowns
  • 2 eggs
  • 1/4 cup milk
  • 3/4 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • Optional: fried egg and/or green onions for topping

INSTRUCTIONS

  1. Turn waffle maker on and let heat up. Spray both sides well with nonstick spray.
  2. Whisk together eggs and milk and mix in the rest of the ingredients.
  3. Use approximately 1 cup of hash brown mixture (depending on the size of your waffle iron) and add to waffle maker. Cook about 5 minutes until waffle is golden brown and crispy and remove from waffle maker.
  4. **It is helpful to turn oven on about 250 degrees to keep waffles warm as you are making the rest of them.
  5. If desired, cook eggs to top waffles.
    Enjoy!

For this recipe, I used Eggland's Best eggs which are used in the waffles and are my egg of choice for the fried eggs. They are an excellent source of vitamin D, B12, E, B5 and riboflavin. They have 6 times more vitamin D, more than double the omega-3, 10 times more vitamin E and 25 percent less saturated fat than other brands of eggs.

    11. I like to make my own version of Egg McMuffin. I scramble eggs, cheese, a little milk and seasonings in a ramekin and microwave for 1 minute. Yum!

    13. I personally prefer my eggs over easy. But if eating with the family, we love scrambled eggs with cheese (depending who is eating them, we will also add a meat and onions, bell peppers and even mix in hash browns). Guess you can tell - we like to eat!
