A few months ago, my kids and I got really into eating chia seed pudding. We have tried a few kinds: Vanilla Berry Chia Seed Pudding, blueberry, peanut butter and jelly and more. I can't wait to try more flavors! My mother-in-law recently told me that she made chocolate peanut butter chia seed pudding and I had to try it out the next week.

My kids and I both loved it and my daughter asks me for it every morning! Since it is such a hit in our household, I wanted to share this Chocolate Peanut Butter Chia Seed Pudding recipe and I hope that it will be in yours too. It takes less than 5 minutes to make, you can choose whatever flavor you want, it tastes amazing, it tastes like you're eating dessert, you feel good after eating it, etc. It's a win, win, win.

My daughter knows that chia seeds are good for our brains so we eat them often (as well as flax). Chia seeds are a good source of omega-3, fiber and protein. I use powdered peanut butter in this recipe but feel free to swap regular peanut butter for the powdered stuff if you prefer. The peanut powder provides some protein and if you use regular peanut butter, that is rich in healthy fats. I use cocoa powder which provides a rich chocolate flavor but is actually quite light.

I ended up blending the chia pudding to make it more smooth which worked fine but I prefer it non-blended. I will put both options in the instructions!

INGREDIENTS

    • 1/2 cup chia seeds
    • 2 cups of milk of choice
    • 1 tablespoon maple syrup or honey (optional)
    • 2 tablespoons peanut butter powder (or peanut butter)
    • 2 tablespoons cocoa powder
    • Toppings: chopped dark chocolate, drizzled peanut butter, pretzels

    INSTRUCTIONS

    1. Mix together all ingredients and refrigerate overnight or at least for 2 hours.
    2. Top with chocolate, peanut butter and pretzels if desired.
    3. Optional: blend chia pudding to make smooth or leave as is.
    **You can double or triple this batch as it lasts for several days in the fridge.
    Enjoy!

  4. This does sound good (healthwise and taste-wise). I'd love to try it, as I was just wondering what to do with some milk I was going to make some kind of pudding, and so glad to find this recipe. Nice to have pudding for breakfast!
