Is anyone else like me in the way that you get pretty hungry for snacks during the day? The kids and I love to have a healthy snack together. I think that snacks can be a great part of a wholesome diet and typically aim for them to be mostly nutritious. I made these healthy Greek Yogurt Carrot Cake Muffins to share with you and I think that you'll love them. They make a great snack, breakfast or even a healthier dessert.

Greek Yogurt Carrot Cake Muffins Nutrition

While they haven't been certified by my friends at the American Heart Association, I made these Greek Yogurt Carrot Cake Muffins with lots of lighter swaps for a nutritious snack! I used white whole-wheat flour instead of all-purpose flour for fiber. I used unsweetened applesauce to make the muffins moist. I lightened up the frosting by using Greek yogurt along with cream cheese for that yummy cream cheese frosting we all love on carrot cake.

They turned out great and stored well in the fridge for a few days! These are great for dessert, breakfast or a snack. My kids both loved them and thought that they were having an indulgent treat when they really were packed with nutrients. The entire large batch disappeared within 24 hours in my house!

Greek Yogurt Carrot Cake Muffins

Greek Yogurt Carrot Cake Muffins are whole-grain and topped with a delicious Greek yogurt cream cheese frosting! Packed with nutritious ingredients such as banana, carrots, nuts, Greek yogurt and more.

INGREDIENTS

  • Carrot Cake Muffins
    • 2 cups white whole-wheat flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 2 medium ripe bananas, mashed
    • 1/3 cup maple syrup
    • 1 egg
    • 1 teaspoon vanilla
    • 1/2 cup unsweetened applesauce 
    • 2 large carrots, shredded
    • 1/3 cup vanilla Greek yogurt
    • 12 whole walnuts
    Cream Cheese Frosting
    • 4 ounces reduced-fat cream cheese
    • 1/4 cup vanilla Greek yogurt
    • Optional: 1 tablespoon honey or maple syrup

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Line muffin tins with 12 muffin liners.
  2. Mix together all ingredients for except for pecans.
  3. Scoop batter into muffin tins (a 1/4 cup scoop or measuring cup works great) and bake for 20 minutes until when a toothpick is inserted, it comes out clean.
  4. Remove from oven and let cool for 15 minutes. 
  5. Mix together cream cheese and Greek yogurt (optional: sweetener) and spread over bread (with an electric whisk if desired). Top with walnuts.
