Grilled Vegetable Pizza

I've been having so much fun firing up the grill all summer so far! Some of my new grilling recipes include Grilled Asian Steak Kebabs, Grilled Honey Lime Shrimp and Vegetables and Grilled BBQ Chicken Salad. One of our very favorite things to grill is a bunch of vegetables. We marinate them for lots of flavor and eat them as a side dish typically. This time, I decided to make a loaded grilled vegetable pizza which uses a mix of summer's best vegetables on top of a flavorful pizza crust.

To make a Grilled Vegetable Pizza, you can feel free to use whatever vegetables that you like. Some of our favorites to grill are eggplant, zucchini, summer squash, onion, mushrooms, asparagus, tomatoes and more. My recommendation would be to visit your local farmer's market and buy whatever looks the best and most delicious. Feel free to switch up the veggie toppings for different pizza combinations.

I used a "pizza blend" cheese which is a mix of mozzarella, Parmesan, romano and provolone cheeses. It gives you that amazing cheese pull where you pickup a piece of pizza and the cheese stretches so beautifully. Plus, it has more flavor than just mozzarella. I stuck with a pre-bought pizza sauce to keep things simple.

Adalyn didn't used to like zucchini, mushrooms or summer squash (though she likes almost all other veggies) and just started liking them all thanks to this pizza! Keep introducing foods to your kids and they may start liking them eventually.

My one constant is my love for Wewalka pizza crust. My most memorable time eating this pizza crust was at New Year's Eve when my husband made a super delicious homemade calzone with sauteed veggies and a homemade herb butter topping. We served two huge calzones at the potluck party and it was all gone in 5 minutes or less- no joke! Everyone was telling Troy how amazing his "Troy-zone" calzone was.

We have been cooking with these Wewalka crusts since and use them for everything! We have an equal love for the Bistro Pizza which is a thin crust round dough and the Classic Pizza crust which is thicker. I love making an easy pizza on these crusts and loading it up with whatever toppings we feel like.

The crust cooks perfectly every time, it comes on parchment paper that rolls out so, so easy and you can have homemade pizza ready to eat in about 20 minutes or less. I buy this crust in the refrigerated section of my grocery store but also stock up on a few at home and freeze it. It defrosts really well and tastes amazing!

INGREDIENTS

  • 1 package Wewalka Bistro Pizza Dough
  • 2 teaspoons olive oil + 1 tablespoon olive oil
  • 1/3 cup cherry tomatoes, halved
  • 1/3 cup portobello mushrooms, sliced
  • 1/4 cup red onion, sliced
  • 1/3 cup zucchini, thinly sliced
  • 1/3 cup summer squash, thinly sliced
  • 1/2 green bell pepper, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/3 cup pizza sauce
  • 3/4 cup pizza blend cheese (mozzarella, parmesan, romano and provolone)

INSTRUCTIONS

  1. Chop all veggies and bring all ingredients outside to have them ready to grill. I recommend using a grill mat if you have one.
  2. Toss sliced vegetables with 1 tablespoon olive oil, garlic powder and onion powder. Grill on a mat or a grill safe pan for 5 minutes on high until cooked through.
  3. Meanwhile, remove dough from package and discard paper that it comes with. Oil one side of dough with 2 teaspoons olive oil and cook dough right on grill or grill mat for 2 minutes on one side and 1-2 minutes on the other side until dough is cooked through. Watch it carefully as it cooks fast!
  4. Remove cooked dough from grill onto a baking sheet or large plate. Top with pizza sauce and cheese. Top with grilled vegetables.
  5. Return pizza to grill carefully and cook for 1-2 minutes until cheese is melted. Remove from grill, slice and serve.
