Tomato Zucchini and Corn Pasta Salad
When local produce is in season, I always stock up! Have you noticed that fruits and veggies taste so much better when they're in season? Especially tomatoes! Corn is a close second. I started making this Tomato, Zucchini and Corn Pasta Salad a couple of years ago for some family and have loved making it often in the summer and fall since.

And just recently, I learned to my surprise that my local Walmart actually stocks fresh fruits and veggies from local farms so that I can bring that fresh-picked flavor straight home!
As part of the second launch of its Rediscovering America program, Walmart recently teamed up with Detroit-based chef Ernesto Magdaleno Guzman, along with eight other renowned chefs across the country, to create a one-of-a-kind dish in his restaurant, showcasing the fresh, locally grown and organic produce that people like you and me can buy right in store!
Lucky for me and Troy, I was invited to try the Walmart-inspired dish at Chef Ernesto’s restaurant, Magdaleno Ristorante in Wyandotte, Michigan. We had never been, and truly loved the food and atmosphere. The very best and most exciting part is that it was Troy and I's first date night out since having Lily 2 1/2 months ago! We got to go out with ZERO kids in tow. A very rare treat for us parents!

Walmart supplied Magdaleno Ristorante with organic celery, organic blueberries and organic tomatoes to help create one of the delicious dishes that we tried: Breaded Blueberry Pork Chops with Italian Pasta Salad. So good! 
The produce partnership highlights the importance of fresh, affordable and locally grown produce and supports bringing that fresh-picked flavor straight to our dinner tables These are all things that I feel very strongly about and aim for in most of my grocery shopping. I always look for the freshest ingredients at the lowest prices, and if they are local, even better!

Troy had the eggplant parmesan, and we shared bruschetta and fried shrimp, calamari and zucchini. I have to say that my favorite part was the creme brulee. I ate every bite!
If you live in the Detroit area or are visiting, I would definitely recommend trying out Magdaleno Ristorante! Everything was super delicious and the atmosphere was great. Our meal there with Walmart’s fresh produce inspired me to make this pasta salad at home using local and organic produce from my local Walmart. If you’re trying this recipe out, I urge you to go to Walmart or check out their online grocery delivery and pickup service to buy their fresh, locally grown produce—seriously, such a time-saver!
Tomato Zucchini Corn Pasta Salad
For this recipe, I sautéed the zucchini and corn and just barely sautéed the tomatoes. You don't want them to get mushy! Watch your veggies closely so they don't burn or overcook. I chose to use shaved parmesan cheese for lots of flavor, fresh basil and bottled Caesar vinaigrette dressing. I got all of my ingredients super affordably at Walmart!

This pasta salad is awesome for a picnic, potluck, for a lunch or for meal prep. It is very versatile and you can throw in anything else you want to add to it. It would be amazing with grilled chicken. For even more veggies, chopped fresh baby spinach would be great. The sky is the limit!

Tomato, Zucchini and Corn Pasta Salad

Tomato, Zucchini and Corn Pasta Salad is loaded with fresh sauteed vegetables, shaved parmesan cheese and Caesar vinaigrette for a delicious lunch that is perfect for meal prep!
Prep Time:  10 minutes Cook time: 15 minutes Total time: 25 mins

INGREDIENTS

  • 8 ounces pasta of choice
  • 2 medium zucchini
  • 2 corn on the cobs
  • 2 cups cherry tomatoes
  • 1/4 cup fresh basil leaves
  • 1 tablespoon olive oil
  • 1/3 cup shaved parmesan cheese
  • 1 cup caesar vinaigrette

INSTRUCTIONS

  1. Fill a pot with water once water is boiling, add pasta and cook according to directions. Drain and rinse with cold water.
  2. Dice zucchini, cut corn off of cobs, halve cherry tomatoes and finely chop basil.
  3. Heat olive oil in a pan. Cook zucchini for 3 minutes stirring halfway through. Add corn to pan and cook for 2 more minutes. Add halved tomatoes and cook for another minute.
  4. Mix together vegetable mixture, pasta, chopped basil, parmesan cheese and caesar dressing.
  5. Serve!
**Stores well in the fridge for up to 3 days.
