Chicken Parmesan Foil Packets

Chicken Parmesan Foil Packets are ready in 25 minutes and are loaded with grilled chicken topped with marinara sauce and lots of melted cheese with garlic zucchini!

The hot weather of summer is finally here and that means a lot less time using my oven and stove and many more meals cooked on the grill! Wahoo! These Chicken Parmesan Foil Packets are beyond easy to make and a family favorite. Who doesn't like marinara sauce and melted cheese?

Chicken Parmesan Foil Packets Ingredients

-Boneless skinless chicken breasts
-Olive oil
-Garlic powder
-Zucchini
-Your favorite marinara sauce
-Parmesan cheese
-Shredded mozzarella cheese

Grilled Chicken Parmesan Foil Packets
Chicken Parmesan Foil Packets have only 7-ingredients, a few which you probably already have on hand. My kids love anything covered in marinara sauce so I knew that they would love these foil packets. I used zucchini since we had it on hand and because I think that zucchini goes really well with Italian-style food. Green beans, mushroom, broccoli and onions would also go really well in these packets.

These Chicken Parmesan Foil Packets can be a complete meal as is or you can pair them with some pasta or rice. I also love grilling some potatoes and pairing it with these foil packets. Or they would be great with some grilled garlic bread!

Chicken Parmesan Foil Packets Nutrition

Chicken Parmesan Foil Packets are much healthier than your typical chicken parmesan because the chicken is not breaded or fried. I added the zucchini for some extra nutrients and fiber. Feel free to bulk these up with more veggies.

I served the foil packets on the Mikasa American Countryside dinnerware set. We are keeping this beautiful country chic set at my parent's farmhouse. I like that they look so beautiful but are also microwave and dishwasher safe. They look even better in person than in the ad online.

Healthy Chicken Parmesan
To make sure that the chicken was cooked through, I took the temperature using my Taylor digital thermometer. It works in just a few seconds and folds up really small so it does not take up a lot of room in my drawer.

Chicken Parmesan Foil Packets

Chicken Parmesan Foil Packets are ready in 25 minutes and are loaded with grilled chicken topped with marinara sauce and lots of melted cheese with garlic zucchini!
Prep Time:  5 minutes Cook time: 20 minutes Total time: 25 mins

INGREDIENTS

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 2 medium zucchini, sliced into half in coins
  • 1 cup marinara sauce
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese

INSTRUCTIONS

  1. Toss chicken in 1 tablespoon of olive oil and toss zucchini in the other tablespoon of olive oil.
  2. Divide chicken breasts and zucchini between 4 large squares of aluminum foil. Sprinkle with garlic powder. Fold in top and sides to enclose filling.
  3. Grill for 15 minutes checking partway through that nothing is burning.
  4. Take the temperature of the chicken with a thermometer to ensure that it is cooked through.
  5. Open each packet and cover chicken breasts in marinara sauce. Top with shredded cheeses. Allow cheese to melt and sauce to warm up for a couple of minutes.
  6. Remove from the grill and enjoy out of the packet or remove contents from packet and serve on a plate.
