Greek Scrambled Eggs + Giveaway

Every Saturday morning after my run, Troy makes the family breakfast. His signature dish is this Mexican Egg Scramble and recently, he switched it up and created these super delicious Greek Scrambled Eggs. They are so delicious and he has made them 4 times now. They have become our signature summer breakfast dish! Greek Scrambled Eggs Ingredients

  • Eggs
  • Milk
  • Tomatoes
  • Feta cheese
  • Fresh dill 
  • Spinach
  • Bell peppers
  • Onion
  • Garlic + onion powder
  • Optional: zucchini, mushrooms, ham, sausage or bacon
  • If you have it, tzatziki sauce

I'm not used to this but I had to ask my husband for this recipe before I made it! He loves that the family loves it. Troy made these Greek scrambled eggs for my parents and they truly loved it. 


Scrambled Eggs with Feta

Tips for Making Greek Scrambled Eggs

-Wait to put the tomatoes in until the very end so they don't cook down to nothing. 

-The fresh dill is key! Do not skip this unless you really have to. It provides so much flavor.


Veggie Eggs with Feta

-Use whatever veggies you have on hand. I would say the tomatoes are essential but the peppers, spinach, mushrooms and zucchini are all optional based on what you have on hand.

-The best sauce on these scrambled eggs is tzatziki sauce. Really though, these scrambled eggs do not need any sauce unless you want it. They have a ton of flavor on their own. You can buy it pre-made or make it in a few minutes yourself. This is my tzatziki recipe.

Right when I get done eating breakfast, I like to take my supplements. After my stomach has some food in it but before I forget as the day gets busy. In full transparency, I am not great about taking them every single day but aim for a few days a week in the summer and most days in the winter months. Greek Scrambled Eggs

Yield: serves 4-6 

Greek Scrambled Eggs

Greek Scrambled Eggs are loaded with feta cheese, fresh dill, tomatoes, onions, spinach and bell peppers for the most delicious breakfast ready in 15 minutes!

Prep Time:  5 minutes Cook time: 10 minutes Total time: 15 mins

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 1/2 cups baby spinach, chopped
  • 1 diced yellow bell pepper
  • 1/2 cup diced onion
  • Optional: diced zucchini, mushrooms, ham, bacon or sausage
  • 12 large eggs
  • 1/3 cup milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2-1 teaspoon black pepper
  • 1/2 cup diced tomatoes
  • 1/3 cup feta cheese
  • 3 tablespoons chopped dill
  • Optional: tzatziki sauce to top

INSTRUCTIONS

  1. In a large skillet over medium-high heat, heat olive oil. 
  2. Sauté spinach, peppers and onions for about 2-3 minutes until they are softened. You can add in any other toppings such as the zucchini or meat if you like.
  3. Whisk together eggs, milk, onion powder, garlic powder and black pepper. Add the whisked eggs to the pan and cook until eggs are cooked through, about 5 minutes. 
  4. Mix in feta cheese, tomatoes and dill and turn off heat.
  5. Top with tzatziki sauce or enjoy as is.
