  • Lime juice
  • Lime zest
  • Frozen banana- less ripe works well in this recipe for less banana flavor
  • Vanilla Greek yogurt- any flavor will also work like lime, coconut or plain
  • Milk of choice- I like 2%
  • Vanilla protein powder- optional
  • Frozen spinach
  • Toppings of choice like toasted coconut chips, granola, nuts and fresh lime

This Key Lime Smoothie Bowl is a great way to start your day with a boost of nutrients. The smoothie is loaded with protein from the Greek yogurt, milk and if you want, protein powder. Spinach is great in smoothies because you can't really taste it and it's loaded with vitamins like vitamins K and A, manganese, iron, magnesium and more. You can use frozen spinach which I love to have on hand for convenience anytime or fresh baby spinach will work. Bananas add natural sweetness, potassium and fiber. Lime juice adds a boost of vitamin C.

Toasted Coconut

It's super easy to toast coconut which makes a delicious topping for this smoothie bowl. It is totally optional but really adds to the tropical flavor. In a small pan over medium-low heat, toast coconut for 1-2 minutes. Watch carefully so it does not burn. It should turn a golden brown color.

INGREDIENTS

  • Juice from 1/2 lime
  • Zest from 1/2 lime
  • 1 1/2 large frozen bananas
  • 1/2 cup frozen spinach
  • 1 cup vanilla Greek yogurt (or other flavor)
  • 1/2 cup milk of choice
  • Optional: scoop of vanilla protein powder
  • Toppings: toasted coconut chips (see how to make below), almonds, granola or cereal, lime slices

INSTRUCTIONS

  1. In a blender, blend together all of the ingredients until smooth.
  2. Top with toppings of choice. Serve right away.
**Toasted Coconut- in a pan over medium-low heat, toast coconut chips for a 1-2 minutes until browned.
