These Peanut Chicken Bowls are packed with flavor, protein and fiber! I loaded them up with a bunch of veggies, crunchy peanuts, garlic chicken and a delicious chili peanut lime sauce that you'll want to drizzle on everything. These bowls make a delicious dinner and I love that it's "help yourself" so everyone can add the toppings they want to their own bowl.   • Brown rice
  • Thinly sliced cooked chicken breast
  • Peapods
  • Steamed broccoli
  • Carrots
  • Yellow bell pepper
  • Cucumber
  • Peanuts 
  • Cilantro
  • Green onions
  • Peanut butter
  • Toasted sesame oil
  • Soy sauce
  • Lime juice
  • Fresh ginger
  • Honey
  • Chili paste or chili onion crunch
  • Rice vinegar
  • Garlic powder

How to Make Peanut Chicken Bowls

First, cook your rice according to the directions. I used the 90 second quick-heat brown rice just to save time! Then, cook your chicken breasts. You can grill them, bake them or sauté them in a pan like I did. I cut them super thin so they would cook quickly. While your chicken is cooking, start slicing and chopping your veggies because that is what takes the most hands-on time. I used what I had on hand, including bell peppers, cucumber, carrots, broccoli, peapods, green onion and cilantro. 


Whisk together all of the ingredients for your peanut sauce. I used a natural peanut butter which was naturally runny but if your peanut butter is thicker, microwave the amount you need in a small bowl so it mixes with the rest of the ingredients better. Set all of your ingredients out in bowls or storage containers and let everyone make their own bowls with the toppings of their choice.

Peanuts have always had a place in my meals and snacks. A huge part of that is- not only do they taste delicious- but they are also packed with nutrients. Protein has been a focus for awhile now but finally we have some eyes on every dietitian's favorite topic: fiber! Fiber is necessary for digestion and to help you feel full. Women need about 25 grams of fiber while men need 38 grams. Most Americans are not getting enough fiber in their diets- many get only 15 grams per day and peanuts have nearly 3 grams of fiber per serving. 


What's really cool about peanuts and peanut butter is that they have protein AND fiber. Many high-protein foods don't have fiber and many high-fiber foods don't have much protein. Peanuts have the benefit of containing both = 7g of protein and almost 3g of fiber per ounce! Peanuts also have vitamin E, magnesium, potassium and other vitamins and minerals. Plus, these bowls are loaded with fiber from all of the veggies, brown rice, peanuts and peanut butter! A good mix of protein, fiber and healthy carbs for a balanced meal that will help you feel your best.

Peanut Chicken Bowls

These Peanut Chicken Bowls are packed with protein and fiber! Loaded with veggies, crunchy peanuts, garlic chicken + chili peanut lime sauce!

INGREDIENTS

  • 2 1/2 cups cooked brown rice
  • 2 1/2 cups cooked, sliced chicken breast
  • 1 1/2 cups sliced carrots
  • 1 thinly sliced yellow bell pepper
  • 1 thinly sliced cucumber
  • 1 1/2 cups peapods
  • 1 1/2 cups steamed broccoli
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped green onion
  • 1/2 cup peanuts
  • Peanut Sauce
  • 1/2 cup natural peanut butter (or microwaved regular peanut butter)
  • 2 tablespoons vinegar
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons lime juice
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey
  • 2 teaspoons grated fresh ginger
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon chili paste
  • Water to thin as needed

INSTRUCTIONS

  1.  Cook rice and chicken if needed. Slice and chop all of the veggies.
  2.  Whisk together all of the ingredients for the peanut sauce. If the sauce is too thick, whisk water into the mixture to get the desired consistency.
  3.  In a bowl, layer your rice, chicken, veggies, peanuts and peanut sauce.
