Peanut Butter Chocolate Chip Bars are high-protein, high-fiber and make the best easy snack or breakfast! They're soft, chewy, and are made with simple ingredients like oats, peanut butter powder, and Greek yogurt.
We love to switch up our snacks and breakfasts but don't have a lot of time on weekdays to cook. These Peanut Butter Chocolate Chip Bars are perfect! They're high in fiber and protein and taste delicious. I meal prep them at the beginning of the week and then we have them for breakfast or snacks through the week.

- Oats
- White-whole wheat flour
- Baking powder
- Baking soda
- Ground flax
- Salt
- Butter
- Eggs
- Maple syrup
- Naked Powdered Peanut Butter
- Greek yogurt
- Milk
- Vanilla
- Chocolate chips
Why Should I Make these Bars?
These peanut butter chocolate chip bars are awesome because they taste like dessert but are actually packed with nutrients. The oats, flour, eggs, peanut butter powder, flax and Greek yogurt all provide protein. The flour, oats, flax and peanut butter powder add fiber for digestion and to help fill you up. I used Naked Powdered Peanut Butter in this recipe and it's so delicious! I have been using this product for years and love it in smoothies, mixed into oatmeal, in yogurt, peanut sauces and in these bars. It's super versatile and a great pantry staple. It contains only 1-ingredient: powdered peanut butter. No fillers, preservatives or sugar. It's a great way to add protein to food without adding protein powder. It's pretty low in calories and fat too if that's something you're watching- one serving has 50 calories and 7 grams of protein.

Peanut Butter Chocolate Chip Bars
INGREDIENTS
- 1 cup quick oats
- 1/4 cup white-whole wheat flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 tablespoons ground flax
- 1/4 teaspoon salt
- 2 eggs
- 3 tablespoons butter, melted
- 1/4 cup maple syrup
- 1/2 cup Naked peanut butter powder
- 3/4 cup plain Greek yogurt
- 1/4 cup 2% milk
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips
INSTRUCTIONS
- Preheat the oven to 350 degrees and spray a medium-sized baking dish with nonstick spray.
- Mix together the peanut butter powder, milk and Greek yogurt in a medium sized bowl.
- In a large bowl, mix together the oats, flour, flax, baking soda, baking powder and salt.
- In another bowl, whisk the eggs and add in the melted butter, maple syrup, peanut butter-yogurt mixture and vanilla. Combine with the dry ingredients. Mix in the chocolate chips.
- Spread the mixture into the baking dish and smooth out with a spatula. Bake for 20 minutes until the bars are cooked though.
- Remove from the oven and let cool before eating.
