Pretty much every year for my Dad's birthday in November, he requests a pumpkin cheesecake from my mom to make. We enjoy this dessert every year- it is a treat for us all! I love cheesecake anything and pumpkin in the fall is just perfect. I created these no-bake pumpkin cheesecakes for a delicious dessert that requires no oven and is healthier and lighter than normal.

Once fall hits, I am mourning the loss of my favorite summer produce but fall food is so fun too. Everything is pumpkin or apple flavored. A hot bowl of chili sounds amazing. I added protein powder for a boost of protein. I used Neufchatel cream cheese for a little less fat. Real pumpkin was used instead of just pumpkin pie spice like some recipes have for vitamins A and C. I made these in little jars because they are just too cute! You can also make them in a bigger container but if you wish.

No-Bake Pumpkin Cheesecakes

Prep Time: 10 minutes

Ingredients

  • 1 8-ounce package of Neufchatel cream cheese, softened
  • 2 cups vanilla Greek yogurt
  • 2 tablespoons maple syrup
  • 1 cup pumpkin puree
  • 1 scoop vanilla protein powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 cup graham crackers, crushed
  • Whipped cream to top

Instructions

1. Mix together cream cheese, Greek yogurt, maple syrup, pumpkin, protein and pumpkin pie spice until well combined.
2. In small jars, layer cheesecake mix with graham cracker crumbs and top with whipped cream.
