It was late one Saturday night when I was on Facebook and saw a video someone making 2-ingredient pancakes with bananas and eggs.

I realized that I had both of the ingredients so I decided to give it a try. I pretty much never keep things super simple so I added some oats and pecans. They were delicious and so easy to make! My husband, daughter and I all loved them. That is a win in my book! I made these pancakes two more times in a short period of time when I finally decided, if we like them that much, they so will my readers!

Life is pretty busy for us right now. I am home on maternity leave with a toddler and a newborn and mornings are the busiest time of day for us. Baby wakes up ready to eat. The toddler has to go to the bathroom and is starving. My dogs need to go outside and be fed. I need to go to the bathroom, etc. etc. Therefore, getting breakfast on the table needs to be quick.

I love doing a bit of meal prep to keep myself sane and have healthy food available at all times. Today, I spent a little bit of time making chicken tortilla soup for dinner and made plenty of it so we can have leftovers. I also cooked up some steamed sweet potatoes and chopped some carrots and cucumbers for healthy snacks.

These flourless banana nut pancakes can be made ahead of time and reheat really well. You can top them with a little maple syrup or nut butter. I like mine with extra bananas, syrup and chopped pecans. Yum! A delicious and filling breakfast to meal prep to save you time in your busy schedule. Feel free to double or triple the recipe so you have plenty leftover for all week.

Flourless Banana Nut Pancakes

Total time: 10 minutes
Servings: 3 (3 pancakes per serving)

Ingredients 

  • 2 very ripe bananas, mashed with a fork
  • 1/4 cup quick oats
  • 4 large eggs
  • 3 tablespoons pecans, chopped

Instructions

1. Mix together mashed banana, eggs, oats and pecans.
2. Heat a nonstick skillet or griddle. Spray with nonstick spray. Spoon the batter onto pan to make about 9 pancakes total.
3. Cook for about 3 minutes on each side. Flip and cook an additional 2 minutes.
4. Top with toppings of choice and enjoy!

**Batter is quite thin so make sure that pan is hot before placing batter on pan so it doesn't spread too much.
**Instead of mashing bananas and mixing by hand, you can also blend the bananas, oats and eggs in food processor and then add in chopped pecans.

  6. Chowing down on the same flavors can get tedious after a while. I save time without boring my taste buds by preparing two or three variations of chicken at once, using aluminum foil dividers in my pan. Sriracha, BBQ, honey mustard — you can have it all. Three birds, one pan!
