California Breakfast Casserole

Thank you  McCormick  for sponsoring this post. Visit your local Wal-Mart to pick up McCormick Good Morning Breakfast for your family! California Breakfast Casserole features layers of turkey sausage, tomato, avocado and hash browns for a hearty breakfast that can be made the night before and baked in the morning! You know that I'm all about breakfast casseroles and egg bakes! I must have 10 of them on here and cannot stop making them. They are my favorite and according to you all, you like them too. I wanted to make something a little different from my typical super veggie-loaded casseroles (though this one has veggies too) and make one with sausage in it. Even though sausage is of course a typical breakfast ingredient, it is not something that I cook with very often. I chose lean turkey sausage which worked so well in this recipe! It is so tasty and super filling as well.

How to Keep Kids Feeling Their Best

Thank you  Genestra HMF Probiotics  for sponsoring this post. Visit GenestraHMF.com to find Genestra HMF Probiotics tod ay! Cold and flu season is so rough. Especially when your child is in school. Adalyn is in three-year-old preschool and already came home with an illness and it is the worst seeing your little one sick. It quickly transferred to Oliver and then to Troy and I.  After that, I decided to pay special attention to putting measures in place to keep everyone as healthy as possible this season. These are the things that our little family is doing to make sure that we are all as healthy as can be.

Salmon Texas Caviar

Salmon Texas Caviar

Salmon Texas Caviar is a delicious black bean, tomato, corn and bell pepper salad with salmon and a tangy lime vinaigrette. Serve as a salad or as an appetizer with tortilla chips! A couple of years ago, I shared my Texas Caviar recipe with you here on the blog. Since then, it has become the recipe that I am most known for in all of my family. When we are invited to a potluck event, this is usually the item that I am asked to bring. Texas Caviar is another name for black bean salad. I usually keep the recipe about the same but sometimes switch it up based on what I have on hand. I decided to whip up this easy Salmon Texas Caviar recipe to share with you to make for the Big Game!

10 Reasons to Vaccinate Your Kids

10 Reasons to Vaccinate Your Kids

By now, you may know that I am very passionate about getting my kids vaccinated. I loved working with the I Vaccinate campaign in 2017 to share why I get my kids vaccinated, and I am excited to do so again! I was even more excited when I went to my kids' pediatrician's office and saw that they had I Vaccinate information all around the office, including pamphlets that patients could take home to learn why vaccinations are important. I love connecting something that I am passionate about with a cause that I work with and seeing it supported by my kids' pediatrician and nurse practitioner- both experts that I look up to and trust with my kids' health.

Loaded Sheet Pan Nachos

Loaded Sheet Pan Nachos come together in 15 minutes and are packed with sautéed  black beans, bell peppers, melted cheese, jalapenos, corn, cilantro, tomatoes and shredded steak! Y ou know those nights where you have no idea what to make for dinner? Typically, I always have an idea of what to make (hello, I'm a recipe developer!) but the last couple of weeks have seemed tougher to think of ideas. We are going through more food than ever with my 10 month old eating like a horse and my 3 year old has always been a huge eater. I felt in a bit of a food rut which is so odd for me so I asked my husband to take over cooking one night and to plan the meal himself.

What to Feed a Baby: 9-12 Months Old

What to Feed a Baby: 9-12 Months Old

Even as a dietitian and second time mom, it was hard for me at times to know what to feed my baby. I think that I forgot what foods are best for a baby so I had to do some research, ask mom friends and look back at what Adalyn was eating at that age. I am so lucky that he is a great eater and so far, the only thing that he has refused to eat is mashed turnips so I think that we're doing pretty well! Lunch was sweet potato, cucumber, tomato and a veggie burger. He ate all of this plus a kiwi. I wanted to share some things that we are feeding Oliver. He is about 10 months old right now. He is still getting breastfed about 4 times per day so some of his nutrition comes from that. I mostly make his food along with buying some healthy baby convenience foods which works so well for our family. The reason that I chose this age range for the post is because my son is in this age range currently and because at this age, babies can move past only having purees and can have soft p

Tips for Exercising with the Whole Family

Exercise is so important to my husband and I for feeling our best. Since we became parents, we felt that it was so important to teach our kids the importance of staying active. Adalyn is now 3 and will tell us "I want to get my exercise so that my body feels good!". We are so proud of her! We make sure to be very positive about exercise and never talk about weight or anything to create body image issues. I want my kids to know that we exercise to feel great and to have fun doing it.

Chocolate Cherry Truffles

Chocolate Cherry Truffles

Chocolate Cherry Truffles are a healthier dessert that still taste indulgent. Super easy to make and only 5 ingredients! Packed with protein rich nuts, dark chocolate cocoa powder and tart dried cherries. Since the summer, I have had anything chocolate cherry on my mind. I was never a fan of chocolate covered cherries but over the summer, I decided to make a Chocolate Cherry Smoothie Bowl  and I was sold on chocolate cherry everything! Anytime I have seen dried cherries on a menu my entire life, I have pretty much ordered the dish. Michigan Cherry Salad with Cherry Vinaigrette is definitely a favorite and so is Cherry Chicken Pasta which I order every year for my mom's birthday. Today, I decided to make a healthy snack to share with you! I made these Chocolate Cherry Truffles with the holidays in mind but they are totally healthy and can be made anytime. They have no-added sugar- the sugar in them comes from dried fruit. They are gluten-free, vegan and totally delicious

Bacon, Potato and Vegetable Egg Bake

Bacon, Potato and Vegetable Egg Bake is simple to make and is full of flavor for a delicious and satisfying breakfast or brunch that your whole family will love! I am obsessed with egg bakes , frittatas and egg casseroles . When I see a new recipe for one, I always pin it! I enjoy making breakfast for my family (Troy and Adalyn) or for my extended family such as when we go up north to my parent's farm or for Christmas morning. I had a bunch of ideas for what to include in this recipe and ultimately decided on bacon, potatoes and veggies. Please, do not feel like you have to make this recipe exactly as is. Feel free to customize it based on your preferences and on what you have on hand.

I have shared a bit of this information before and some of it, I am sharing for the first time. I love looking back on these and sharing all that happened in a year.
