The weather is finally very warm and I'm loving it! We are in full on summer mode over here and are starting to check things off of our summer bucket list. Suddenly I find us spending all of our time outside, taking less time to cook meals and wanting to eat outdoors. We're going on daily walks, Adalyn learned how to ride a bike, we're visiting all the playgrounds and it's all amazing! Can you tell that I love summer?

We've fired up the grill quite a few times already and I wanted to share this delicious buffalo chicken foil packets recipe with you. If you like buffalo hot sauce, you'll love this recipe. I love eating kebabs but don't like sitting there and stringing the food on the stick so instead of threading everything on a skewer, I decided to throw it in foil packets which saves a ton of time.. These are perfect for grilling and bringing to our local park to have a picnic and then go swimming afterwards. A perfect summer day!

These foil packets are customizable based on what you like/have on hand. Some great options include peppers, onions, zucchini, summer squash, potatoes, corn on the cob, cherry tomatoes, mushrooms and more. I just used a variety of what I had on hand and it came out great. For the kids, I skipped the buffalo sauce and used an herb vinaigrette instead. You can also totally drizzle on some blue cheese dressing or crumbles on these if you desire.

For this recipe, I bought all of my ingredients at Meijer. Meijer has the freshest produce that always seems to be great quality. This year, I had the best blackberries of my life from there. Their produce section is large and has tons of options. I like looking through their ad to find out what is on sale and stocking up on those items.

Buffalo Chicken Foil Packets

Buffalo Chicken Foil Packets is the perfect meal to make on the grill with spicy buffalo chicken, corn on the cob, bell peppers, onions and zucchini.
prep time: 10 MINS cook time: 20 MINS total time: 30 mins

INGREDIENTS

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1 inch cubes
  • 1/4 cup Frank's hot sauce
  • 1 medium zucchini, sliced
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 orange bell pepper, cut into 1 inch pieces
  • 1/2 onion, cut into 1 inch pieces
  • 2 cobs of corn, cut into 1 inch pieces
  • 2 tablespoons butter, cut into small pieces
  • 1-2 teaspoons garlic powder

INSTRUCTIONS

  1. Marinate chicken in hot sauce as you chop the vegetables.
  2. Tear off 3 pieces of about 1 foot of aluminum foil.
  3. Add vegetables, chicken, pieces of butter and garlic powder onto aluminum foil.
  4. Wrap up sides of foil into a closed packet. Grill for about 10 minutes on each side until chicken is cooked through.
  5. Top with additional hot sauce as desired. Enjoy!

  3. I shop at Meijer a couple of times a month. I especially love the fresh greens in the produce section! It's hard to find collard greens in other stores.
