Spicy Shrimp with Tomatoes and Zoodles

I'm holding onto summer foods just a bit longer! Our farmer's market still has zucchini and our garden is producing lots of tomatoes which is how this delicious recipe got created. Spicy Shrimp with Tomatoes and Zoodles is super easy to make and full of flavor!

I love zoodles (zucchini noodles) as a pasta replacement not only to be healthier but because they are fun to eat. I just saute them for a few minutes and they are ready to eat. No boiling water required like with pasta!

The spicy shrimp was inspired by a meal that I ate on vacation last year called shrimp fra diablo. It was sauteed shrimp in a spicy tomato sauce and I was totally obsessed. I added it to my list of recipes to make and finally made it happen. Why did I wait a year? It's so good!

The spicy tomato sauce is loaded with flavor from sweet fresh tomatoes, onions and fresh garlic. When you combine those delicious ingredients, you are sure to have a flavorful sauce that everyone loves. I added red pepper flakes for a kick of heat.

4th & Heart Ghee
The shrimp, tomatoes and zoodles are sauteed in 4th and Heart Ghee from Walmart. You can find these in the butter section at Walmart. Ghee is a clarified butter that is heated and reduced. After heating it, you are left with a pure healthier fat.


It is dairy free and lactose free. You can use ghee anywhere you would use butter or oil. I like using it in baking as well as for roasting vegetables, making scrambled eggs, sauteing chicken breasts and more.

4th and Heart GheeThe ghee has a stronger flavor than butter so in my opinion, you need less of it in a recipe. 4th and Heart products are high quality and taste great. Spicy Shrimp with Tomatoes and Zoodles features a spicy tomato sauce with fresh tomatoes, garlic and onions with sauteed shrimp and zucchini noodles ready in 20 minutes!

INGREDIENTS

  • 3 tablespoons 4th and Heart Ghee, divided
  • 1 pound shrimp, peeled and deveined 
  • 3/4 teaspoon red pepper flakes
  • 1/2 cup white onion, diced
  • 4 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 3 medium zucchini, spiralized into zoodles
  • 1 teaspoon garlic powder

INSTRUCTIONS

  1. In a frying pan, melt 1 tablespoon of ghee. Swirl melted ghee around pan and add in shrimp. Cook until shrimp are pink and have a light browning on them. Add in red pepper flakes and stir. Remove shrimp from pan and set aside.
  2. Add another tablespoon of ghee to pan. Saute onion for about 2 minutes, add in garlic and tomatoes and cook for about 5 minutes until tomatoes are starting to burst. 
  3. Meanwhile, add the last tablespoon of ghee to another pan and melt. Cook zoodles for about 3 minutes until they soften but are not mushy. Add in garlic powder and stir.
  4. To serve, top zoodles with tomatoes and sauteed shrimp or mix all together.
