Mexican Street Corn Nachos

Mexican Street Corn Nachos are loaded with grilled corn, melted muenster cheese, a creamy lime Mexican street corn sauce, chicken and veggies!

I have heard of Mexican street corn for a really long time but had never tried it until earlier this summer. My sister Natalie came up north to my parent's farm and made Mexican street corn and it was so delicious that I had to ask her for the recipe right away. I have since made Mexican street corn for my family quite a few times all summer long and also love taking the Mexican street corn sauce and making it into Mexican street corn nachos for an easy but super delicious dinner that my entire family loves!

Our Mexican street corn sauce is a little bit non-traditional. We use McCormick® Mayonesa with Lime Juice, plain Greek yogurt, lime juice, either Parmesan cheese, feta or cotija cheese, chili powder and optional: cayenne powder if you like it spicy. It is the most delicious flavor combination that tastes incredible on grilled corn on the cob. My kids really love it as well which is great to be able to make a meal that the entire family loves.


Loaded Mexican Street Corn Nachos

In case you haven't used McCormick® Mayonesa with Lime Juice before, it is made with lime juice for unique flavor profile and it’s a simple way to liven up your favorite dishes. McCormick® Mayonesa with Lime Juice has an authentic flavor as it is the same recipe from Mexico! You can find it in the condiment aisle of your grocery store- I bought mine at my local Kroger.



McCormick® Mayonesa with Lime Juice is so perfect in this street corn sauce, on nachos, or drizzled on tacos.

It is perfect for a hint of lime added to your recipe. You could also use McCormick® Mayonesa with Lime Juice for coleslaw for a way to liven up standard coleslaw. It is perfect for Mexican-inspired recipes too.


Veggie Loaded Mexican Street Corn Nachos

It is totally up to you if you use chicken, beef, pulled pork or beans on these nachos. I have tried it a few of the ways and it is all great. To make these more of a complete meal since that is always my goal with nachos, I added tomatoes, red onion and bell peppers to the nachos for extra nutrients and fiber. My husband's family is Mexican and they love using muenster cheese on many of their Mexican dishes so I used shredded muenster cheese on these nachos for the cheesiest nachos ever.


Street Corn Nachos

These Mexican street corn nachos come together quickly. Just grill the chicken and the corn. A tiny of black on the corn is good because it gives it extra flavor. Then, you chop up the chicken into tiny pieces and slice the corn off the cob. Mix up the Mexican street corn sauce and chop your veggies. Toss everything on a sheet pan and bake in the oven. Drizzle with Mexican street corn sauce and top with fresh cilantro. Dinner ready quickly!

Mexican Street Corn Nachos

Mexican Street Corn Nachos are loaded with grilled corn, melted muenster cheese, a creamy lime Mexican street corn sauce, chicken and veggies!
Prep Time:  10 minutes Cook time: 20 minutes Total time: 30 mins

INGREDIENTS

  • Mexican Street Corn Sauce
  • 2 tablespoons McCormick® Mayonesa with Lime Juice
  • 1/4 cup plain Greek yogurt
  • Juice from 1 lime
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne powder (optional)
  • 1/4 cup feta, cotija or Parmesan cheese

Nachos
  • 1/2 pound boneless, skinless chicken breasts
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1 corn on the cob
  • About 2 cups of tortilla chips
  • 1/2-3/4 cup shredded muenster cheese
  • 1/2 green bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup tomatoes, finely chopped
  • Fresh cilantro, chopped

INSTRUCTIONS

  1. Brush chicken breasts with olive oil and sprinkle with garlic powder. Grill chicken and corn until chicken is cooked through. Finely dice chicken breasts and slice corn off of the cob.
  2. Mix together all of the ingredients for the Mexican street corn sauce.
  3. Spread tortilla chips all over a large sheet pan. Top with chicken, peppers and corn.
  4. Turn broiler on high and broil nachos for about 5 minutes or until cheese is melted- watch carefully so that nachos do not burn.
  5. Top with tomatoes, red onion and cilantro and drizzle with Mexican street corn sauce.
