Roasted Green Beans and Carrots

Easter is almost here and sometimes, it is nice to have a simple go-to side dish that can be whipped up without a lot of time or effort being put into it. These lemon dill roasted green beans and Dijon maple roasted carrots are perfect! With less than 5 minutes of hands-on time per dish, they are crazy easy to make while you spend more time on the rest of the food you're preparing but are very tasty. Enjoy these simple roasted vegetables year round or for an holiday side dish.


Lemon Dill Roasted Green Beans

Lemon Dill Roasted Green Beans are really easy to make. Just toss your trimmed and washed green beans in olive oil. Roast until crispy and then top with lemon juice, fresh chopped dill, black pepper and a little salt. If you can tolerate it, garlic powder and onion powder add a lot of flavor too. These pair really well with chicken and pork dishes.

Lemon Dill Roasted Green Beans and Dijon Maple Roasted Carrots are so easy to make and make the best side dish!.

Prep time: 5 MINS  Cook time: 20 MINS  Total time: 25 mins

INGREDIENTS

  • 1 pound green beans, ends trimmed
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1-2 tablespoons fresh chopped dill
  • 1 teaspoon black pepper 
  • 1/2 teaspoon salt 

INSTRUCTIONS

1. Preheat oven to 400 degrees.
2. On a large sheet pan, toss the green beans with olive oil and spread out in an even layer.
3. Roast in the oven for 15 minutes flipping the beans halfway through. Remove from the oven when beans are soft but lightly crispy.
4. Toss green beans with lemon juice, dill, garlic and onion powder, black pepper and salt. 
5. Serve green beans hot. Leftovers store well in the fridge for about 3 days. Enjoy leftovers cold or reheated in the microwave.

Dijon Maple Roasted Carrots

The key to making these Dijon Maple Roasted Carrots crazy delicious is to slice them super thin and to use enough olive oil to make them crispy. Almost like a carrot chip. These are a family favorite that pairs well with fall and holiday dishes. Thinly slice your carrots, toss them in olive oil and bake until crispy. Then, toss with Dijon mustard, a little vinegar, maple syrup and salt and pepper. Easy peasy but still delicious. These carrots only

INGREDIENTS

  • 4 cups very thinly sliced carrots

  • 2 tablespoons olive oil

  • 1 teaspoon black pepper

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 tablespoon Dijon mustard

  • 1 tablespoon maple syrup

  • 1/2 teaspoon salt 

INSTRUCTIONS

1. Preheat the oven to 425 degrees F. 
2. On a large sheet pan, toss together the carrots and olive oil. Roast in the oven for 15 minutes.
Preheat oven to 400 degrees.
3. Remove sheet pan from the oven and toss carrots with pepper, garlic and onion powder, Dijon mustard, maple syrup and salt. Return to the oven and roast for another 10 minutes until the carrots are crispy.
4. Serve the carrots hot and store leftovers in the fridge for up to 3 days. Reheat leftovers in the microwave.
