Vegetarian Lent Fridays

As a Catholic, I do not eat meat on Fridays during Lent.  I wanted to give all of you Catholics out there some great meat free options that are also healthy and simple. Enjoy!

Here are some of my favorites:

    I also love to cook and while I know a lot about healthy food and nutrition I haven't always practiced what I know. I think your blog is going to be very helpful to me in supporting my current endeavor to be healthier. I really think these recipes look good!
