To me, there is nothing like a delicious salad. When I find a salad recipe that I love, I make it over and over again. Fresh vegetables + a delicious dressing = heaven to me! I have been a big fan of panzanella salad for years. Ironically, I have shared 2 unique panzanella recipes (Pizza Panzanella Salad and Grilled Tofu Panzanella Salad) before ever sharing a recipe for a classic panzanella salad.

With the weather warming up, it is time to find all of the best produce and chop it up in a salad and top with homemade toasted garlic bread pieces. All of the veggies and croutons are drizzled in a homemade Italian style dressing. You won't be able to get enough.

Whenever my mom makes a panzanella salad, I seriously eat serving after serving until it is gone. It is my favorite! All of the fresh flavors combined are so great. I could not find fresh basil in 2 stores that I went to but found some fresh dill that gave the dish a delicious fresh flavor. Either fresh dill or basil would work! Panzanella Salad

Prep Time: 10 minutes
Cook Time: 8 minutes
Servings: 4

Ingredients 

  • 1 1/2 cups French bread, cubed
  • 1-2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 2 cups grape tomatoes, halved
  • 1 English cucumber, sliced
  • 1/2 red onion, diced
  • 1/2 orange bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 2 tablespoons fresh dill, diced
Homemade Italian Dressing
  • 1/3 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 teaspoon black pepper

Instructions

1. Preheat oven to 350 degrees. Drizzle French bread cubes with olive oil, sprinkle with garlic powder and bake in oven until pieces are crispy- about 8 minutes.
2. Whisk together all ingredients for Italian dressing.
3. Combine all salad ingredients except for garlic croutons and dressing. When ready to serve, mix in dressing and garlic croutons.
