Anything that is Greek-style always appeals to me. Whether it is a big Greek salad, lemon rice soup, spinach pie or a Greek pita wrap, my eyes always perk up when I see Greek food on a menu. My husband loves gyros so much so I decided to make us a loaded gyro salad. It is full of flavor and so delicious- especially for summer but it would be great year-round as well.

We recently went to an outdoor concert with my mom who made these awesome Greek chicken skewers with homemade tzatziki sauce. I knew that I wanted to make tzatziki for my dressing for this salad as soon as I tried hers because it was so good. I called her for a little help for the recipe. It's always great having your mom just a phone call away.

The best part about this recipe? No cooking required! Just a little use of the microwave and lunch or dinner will be ready in no time at all! You could use grilled chicken in this recipe if you do not eat beef. Of course, you could go with traditional lamb too. I loaded this salad up with a bunch of vegetables for a complete meal that is healthy and delicious! Hope you enjoy.

Gyro Salad with Tzatziki Sauce


Prep Time: 10 minutes
Servings: 4

Ingredients

  • 8 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/2 red onion, sliced
  • 1/2 cup feta cheese
  • 4 Sandwich Bros. of Wisconsin Gyro Sliders
  • Sprinkle of Greek seasoning on top
Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, very finely diced
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 2 teaspoons dried dill
  • 1/4 teaspoon salt
  • Optional: 1/2 teaspoon of honey

Instructions

1. Heat gyro sliders in microwave. Chop into pieces.
2. Mix together ingredients for tzatziki sauce. If you prefer a very smooth sauce, blend ingredients together.
3. Lay out a bed of romaine lettuce on plates or in a large bowl and top with tomatoes, cucumber, red onion, feta and gyro sliders. Top with tzatziki. Sprinkle with Greek seasoning if desired.

For the gyro, I kept things really simple and chopped up a Sandwich Bros. of Wisconsin Gyro Slider which features a beef hamburger with herbed yogurt cheese in a pita.
