I have loved tabbouleh salad my entire life but have only made it a couple of times- this time being one of them. When I go to a Mediterranean restaurant, I often order tabbouleh salad and think that it is absolutely delicious! I can't get enough. I haven't made it for at least 5 years and finally thought, why not make one of your favorite easy salad recipes at home? I'm excited to share this Easy Tabbouleh Salad with you today!

What is Tabbouleh Salad? 

Tabbouleh salad is an authentic Lebanese salad that is made traditionally with parsley, lemon, tomatoes and bulgur wheat. It is often served at Mediterranean restaurants as a side dish or a condiment on wraps and more.

How to make Tabbouleh Salad

First, you cook your grains. Traditionally, bulgur is used but I had freekeh on hand and it tastes exactly the same in this particular dish so I would say that you could totally use either. Then, you chop your fresh parsley and tomatoes finely. Squeeze in lemon juice, olive oil, black pepper and if you have it on hand, add in a handful of diced green onions. Mix in the bulgur or freekeh and enjoy!

What finally got me to make this Easy Tabbouleh Salad is that in 3 short months or so, our third baby is born and while breastfeeding, eating parsley is a no-no because it reduces milk supply. Therefore, I am trying to get my parsley fix in now before I have to take about a year off of eating one of my favorite herbs.

I have to mention that both of my kids went crazy for this! I couldn't believe how much they loved it. Adalyn ate about 1 1/2 cups worth for dinner the first day and then ate two wraps loaded with hummus and tabbouleh the second day. Oliver loved eating it as a side dish for dinner especially. This salad is healthy and so delicious, I could eat it on everything!

How to Eat Tabbouleh Salad

This Tabbouleh Salad lasts a couple of days in the fridge and is wonderful eaten alone as a salad, on a wrap with hummus and red cabbage for crunch or anyway you like really. It is ready in just 15-20 minutes and is full of flavor.

Yield: about 8 cups of salad

Easy Tabbouleh Salad is ready in just 20 minutes and is fresh and healthy with parsley, tomatoes, lemon juice and bulgur or freekeh grains!
Prep Time:  5 minutes Cook time: 20 minutes Total time: 20 mins

INGREDIENTS

  • 1 cup bulgur or freekeh grains
  • 2 bunches parsley, about 10 cups chopped
  • 1 cup tomatoes, finely diced
  • 2 green onions, diced
  • 1/4 cup olive oil
  • Juice from 1 large lemon
  • 1 teaspoon black pepper

INSTRUCTIONS

  1. Cook grains according to directions- about 15-20 minutes. 
  2. Meanwhile, very finely dice parsley, tomatoes and green onion.
  3. Mix together all ingredients and enjoy immediately or let sit in the fridge for a couple of hours to let flavors blend together and for parsley to slightly soften.
  4. Serve as a side dish or have on a wrap with hummus and red cabbage for example.
