I love a nutritious smoothie to start the day! I often drink my smoothies in a glass but when I want them to be like ice cream, I make them extra thick like this Mint Chocolate Chip Smoothie Bowl. This smoothie bowl is very easy to make and is ready in just a few minutes. It is filling and tastes more like dessert than a healthy breakfast. 


Healthy Mint Smoothie Bowl

My family loves starting our day with a nutritious breakfast. With breakfast, we take our supplements for the day. I currently am taking a multivitamin, omega-3 fatty acids (DHA) and a probiotic. This smoothie bowl is loaded with frozen bananas, frozen spinach, fresh mint leaves, chocolate protein powder and milk. I used frozen spinach this time because that is what I had on hand but fresh baby spinach works really well too. You could skip the protein powder if you wanted or use vanilla protein powder as an alternative.

For toppings, if I am having it for breakfast, I would probably just have a little chocolate or just the chocolate granola but if I'm having it for dessert, I would definitely be generous with the chocolate!

INGREDIENTS

  • 1 large banana, frozen in pieces or slices
  • 1 1/2 cups baby spinach
  • 3-5 mint leaves
  • 1 cup milk
  • 1 scoop chocolate protein powder
  • Toppings: chocolate granola, chocolate chips

INSTRUCTIONS

  1. In a blender, blend together the banana, spinach, mint, milk and protein powder until very smooth. Since you are using less liquid to make a thick smoothie bowl, you may need to use a spatula to make sure no ingredients are stuck to the sides.
  2. Divide the smoothie into two bowls and top with the toppings of your choice.
