Peanut Butter Breakfast Bars are soft, chewy, are easy to make and are nutritious with oats, peanut butter and bananas. They're simple with only 6-ingredients and make a great breakfast or snack!

Do your kids ask you what is for breakfast every night before bed? No? Just mine? Every night when I put Adalyn and Oliver to bed, they ask me what we are going to eat when they wake up. They are always interested in the next meal and love switching their breakfasts up. I made these Peanut Butter Breakfast Bars which are perfect for quick and easy breakfasts and the whole family can enjoy them together. They are soft, fluffy and have a similar texture to banana bread.

Today, I partnered with The Peanut Institute to share all about feeding kids peanuts and peanut butter. We started our kids really young on peanut butter- maybe about 7 months. I would mix it into their baby cereal or oatmeal and give it to them. I love that peanut butter has protein, fiber and healthy fats. These breakfast bars are super toddler friendly and make a great snack or breakfast. Lily is almost 2 and loves these!


Why Toddlers Should Eat Peanut Products

The early years of a child's life are so important for nutrition. Kids grow a ton during the first 24 months and it is important for the foods and drinks that kids eat and drink are packed with nutrients. The American Academy of Pediatrics recommends that parents introduce food around 6 months old and this can be a great time to introduce peanut products.

Peanut Butter Banana Breakfast Bars

Peanuts and peanut butter are an important source of iron, zinc, protein, choline and long chain polyunsaturated fatty acids. These nutrients can help contribute to healthy development. I was worried the first time that I fed my first child Adalyn peanut butter because of an allergy but early introduction of peanuts can actually help to reduce the risk of peanut allergies which is really cool!

Eating peanuts and peanut butter can help to promote healthy brain and body development. It can also help to promote healthy eating habits throughout your child's life and can protect against childhood and adult obesity and chronic diseases.


How to Introduce Peanut Products to Babies and Toddlers

I'm sure you know this but you can't just give a baby a whole peanut! To start feeding a baby peanut products at about 6 months-12 months old, you can mix peanut butter into a food such as baby cereal. As the child gets a little older- maybe 9-12 months+, you can add peanut butter or chopped peanuts to your child's muffins or breakfast bars such as these. It is also great on toast, on fruit like a banana or in any baked good.

Adults and kids will both love these peanut butter breakfast bars. I kept them crazy simple with peanut butter, bananas, quick cook oats, eggs, maple syrup and baking powder. If you are making this recipe for a baby or young toddler, you can skip the syrup if you like to make it so these bars have no added-sugar.


Healthy Peanut Butter Breakfast Bars
These bars are naturally gluten-free since I used gluten-free oats. They are high in protein from the peanut butter, eggs and oats. They are rich in fiber from the peanut butter, oats and bananas. I love doubling the batch and making these to enjoy for breakfast and snacks through the week. You can also make these bars into a loaf of bread if you like. The bars are soft and chewy and so delicious!

Yield: 8 bars 

Peanut Butter Breakfast Bars 

Peanut Butter Breakfast Bars are soft, chewy, are easy to make and are nutritious with oats, peanut butter and bananas. They're simple with only 6-ingredients and make a great snack!
Prep Time:  10 minutes Cook time: 20 minutes Total time: 30 mins

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 350 degrees and spray a 7 x 11 glass baking dish with nonstick spray.
  2. Blend oats in a food processor until ground. Add the rest of the ingredients to the food processor and blend until smooth. 
  3. Pour batter into the baking dish and bake for 20 minutes until a toothpick stuck into the center of the loaf comes out clean. Let cool before slicing.
**Syrup can be omitted for babies and toddlers if desired.
