Weekday mornings are busy now that the kids are back in school. I love to workout in the morning and the kids need an early breakfast which leaves little time to cook breakfast during the week. It helps us out so much when I prep a couple of ingredients or meals on the weekend for the week ahead and I've been loving these Pumpkin Protein Waffles. They're whole-grain, protein-packed, made with real pumpkin and toast up nicely during the week. If you're looking for a delicious yet nutritious breakfast, check out these waffles.
If you're looking to really stock yourself up on waffles, feel free to double the batch and freeze a bunch. This batch in my large waffle maker makes 8 large waffles. I would say an adult would eat somewhere between 1/2 a large waffle and a whole one.
Taylor Smart Food Scale
Since baking is a science and turns out best when you accurately measure the ingredients, I used the Taylor Smart Food Scale with Precision Hub App. The scale of course helps me weigh my ingredients for this recipe while the app does everything else! Pumpkin Protein Waffles
Pumpkin Protein Waffles
INGREDIENTS
- Dry ingredients
- 1 3/4 cup white whole-wheat flour
- 1/4 cup vanilla protein powder
- 4 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- Wet ingredients
- 1-15 ounce can of pumpkin puree
- 2 eggs
- 1 1/2 cups 2% milk
- 2 teaspoons vanilla
- 1/4 cup maple syrup
- 2 tablespoons melted butter
INSTRUCTIONS
- In a large bowl, mix together all of the dry ingredients. It's super helpful to measure the flour with a Taylor Smart Food Scale to make sure you're using the correct amount!
- In another bowl, whisk together all of the wet ingredients. Stir to combine all of the ingredients together.
- Preheat a waffle iron, spray with nonstick spray and cook waffles according to waffle maker instructions- usually about 3 minutes.
- Top with fruit, pecans, butter and/or syrup
