I am on such a baked oatmeal kick and I cannot stop trying different flavors and sharing them with you- Salted Caramel Baked Oatmeal, Pina Colada Baked Oatmeal and Summer Fruit Baked Oatmeal. They are so easy to make, are healthy and taste awesome. Carrot cake is one of my favorite kinds of cake in the world and the idea of a healthy carrot cake style dish sounds amazing to me.

I decided to test out these carrot cake baked oatmeal cups and they turned out amazing. Since they are for breakfast, I did not want an unhealthy frosting on them so I made a healthier option with light cream cheese and vanilla Greek yogurt. I was very happy with the results.

We packed these for a trip and kept the "frosting" separate and just topped it with the frosting right before we ate them. I would definitely make them again and really enjoyed this healthy but satisfying breakfast. These would also be great for a snack.

Carrot Cake Baked Oatmeal Cups

Prep Time: 10 minutes
Cook Time: 15-20 minutes
Servings: 4

Ingredients

    Carrot Cake Baked Oatmeal Cups
    • 3 cups old fashioned rolled oats
    • 1 1/2 teaspoons baking powder
    • 1 scoop Purely Inspired French vanilla protein powder
    • 1 1/2 teaspoons cinnamon
    • 1 1/3 cups milk
    • 2 eggs, beaten
    • 1/4 cup light syrup
    • 1 cup shredded carrots
    • 1/4 cup raisins
    • 1/4 cup chopped pecans
    Cream Cheese Frosting
    • 1/2 cup vanilla Greek yogurt
    • 2 tablespoons light cream cheese

    Instructions

    1. Preheat oven to 375 and spray muffin tins with nonstick spray.
    2. In a bowl, combine all ingredients except for nuts and raisins and mix well.
    3. Scoop batter into muffin tins and bake for 10 minutes.
    4. Remove from oven and top with raisins and nuts.
    5. Bake for another 5 minutes until oats are set.
    6. Beat together Greek yogurt and cream cheese.
    7. Top oatmeal cups with frosting.
    Enjoy!

    These got even tastier the next day. I had topped the oatmeal cups with the cream cheese frosting and put them into the fridge for breakfast the next day. I loved them cold out of the fridge because it was moist and dense like carrot cake. I topped mine with a bit of extra syrup for sweetness.
