When the weather gets warm, all I want to do is eat loads of fresh foods such as summer's fruits and vegetables. With different kinds of "bowls" being all the rage, I decided to create a delicious and healthy bowl to share with all of you.

Customize them with whatever vegetables you prefer or have on hand. If you do not like feta cheese, use blue cheese or mozzarella. I used brown rice in my recipe which is ready in just 10 minutes for a quick meal. I made a simple lemon vinaigrette for this recipe so that you can really taste the awesome flavors of the grilled vegetables.

I am a huge fan of using whole-grains in my recipes. In fact, I rarely buy any grains that are not whole-grains. Whole-grains have more fiber and nutrients than their refined counterparts. They are digested slower and therefore, spike your blood sugar less.

Veggie Rice Bowl


Prep Time: 5 minutes
Cook Time: 7 minutes

Servings: 4

Ingredients

  • 4 cups cooked brown rice
  • 1 cup asparagus, chopped
  • 1 tomato, diced
  • 1 avocado, sliced
  • 1/2 cup fresh corn
  • 1 cup kale, chopped
  • 1 cup garbanzo beans, drained and rinsed
  • 1/2 cup crumbled feta cheese
Lemon Vinaigrette
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper

Instructions

1. Cook brown rice according to instructions.
2. Whisk together ingredients for lemon vinaigrette.
3. Get out 4 bowls and add 1 cup of cooked rice to each. Top with vegetables. Add in feta cheese and garbanzo beans. Pour lemon vinaigrette over.

These bowls turned out awesome and I could see them being a summer staple! I would also make them with chicken or make them Mexican-style with black beans, corn and peppers.

  2. Must remember to pick up some brown rice at Sprouts Farmer Markets since It's on sale for 2 pounds for a dollar--great price and good staple to keep on hand.
