I can't stop making baked oatmeal. It is just too easy for meal prep, kid-approved and delicious! These Banana Almond Baked Oatmeal Cups are packed with fiber, protein and make a great breakfast or snack. If you have kids, feel free to get them involved in the kitchen helping you make these because they will love it!


When making baked oatmeal, I learned a tip that made my baked oatmeal so much better. For this recipe, skip the old-fashioned oats and use quick oats instead. The texture of the oatmeal cups come out so much better. They are a little more light and fluffy like a muffin compared to being more dense if made with the old-fashioned oats.

When I made these Banana Almond Baked Oatmeal Cups a couple of weeks ago, they disappeared so quickly in my home. Between my kids and I, we really enjoyed them! I had them for snacks and for breakfast.

I chose to make these with bananas since banana bread is so delicious. Make sure that you use ripe bananas for the most flavor and sweetness. Don't be afraid of those brown spots on the peel of your bananas! I used roasted almonds in this recipe and drizzled the oatmeal cups with almond butter. If you prefer peanut butter, that is totally fine!

Prep Time:  5 minutes Cook time: 20 minutes Total time: 25 mins

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 375 degrees.
  2. Mix all ingredients together.
  3. Spray muffin liners with nonstick spray and fill each cup with oatmeal mixture in a muffin tin.
  4. Sprinkle the tops of oatmeal cups with the chopped almonds.
  5. Bake for 20 minutes until oats are fully set and mixture is not liquidy. Drizzle cups with almond butter before eating.
