Making crazy salads is one of my very favorite things to make. I love switching things up with a big variety of toppings and different flavors. My mom is the queen of huge salads for meals and that is where I think I get my love of big salads from. Luckily, my husband shares the same love of big salads that I have so making dinner at my house is easy. Adalyn also loves salads so much. We are a salad loving household!

For this salad, I decided to go a little crazy. It is summer and all of the produce is so fresh, flavorful and delicious so I decided to go wild and load this salad with all-the-toppings and flavors. I debated on adding black beans for the protein, using mangoes instead of pineapple, putting the corn in the salsa instead of on the side, etc. I think that all of these options would work well.

This salad is not one of those lame salads with iceberg lettuce and a tomato slice. Nope! It is loaded with fresh grilled corn on the cob, bell peppers and red onions. Then, it is topped with a fresh pineapple salsa with peppers, onions and tomatoes with lime juice. The finishing touch was a high protein Sandwich Bros. chicken melt, chopped up. These are tasty and my whole family likes them. For a dressing, I think that a creamy dressing such as an avocado ranch or a cilantro ranch would work well but I decided to go with a homemade garlic lime vinaigrette for maximum fresh flavor.

Pineapple Salsa Chicken Salad


Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 4

Ingredients

    Grilled Vegetables
    • 1 tablespoon olive oil
    • 1 bell pepper, sliced
    • 1 red onion, sliced
    • 2 ears of corn
    Pineapple Salsa
    • 1 cup fresh pineapple, diced
    • 1 bell pepper, finely diced
    • 1 tomato, diced
    • 1/2 red onion, diced
    • 2 tablespoons lime juice
    • 1/2 teaspoon black pepper
    • Optional: sprinkle of cayenne pepper
    Garlic Lime Vinaigrette
    • 1/4 cup olive oil
    • 1/4 cup lime juice
    • 1 teaspoon garlic powder
    -4 Sandwich Bros. of Wisconsin Chicken Melts
      -8 cups romaine lettuce, chopped

        Instructions

        1. Drizzle vegetables in olive oil and grill for about 5 minutes on each side until vegetables are soft.
        2. Mix together ingredients for pineapple salsa.
        3. Whisk together ingredients for vinaigrette.
        4. Heat chicken melts according to instructions and chop into bite sized pieces.
        5. Cut corn off the cob.
        6. Fill each bowl or plate with 2 cups romaine lettuce, grilled vegetables, a scoop of pineapple salsa and chicken melts. Drizzle with dressing.

        For the chicken, I kept things really simple and chopped up a Sandwich Bros. Chicken Melt which features all white meat chicken and Wisconsin cheese in a pita. I just heated it up and chopped it into bite sized pieces for a simple addition of protein. These come in a few snack varieties including the Angus Cheeseburgers, Pizza Melts and Gyro Sliders.

        If I'm on the go, I like heating these up in the microwave for a quick snack or part of my breakfast. I eat the Chicken Melts without any sauce and like a little bit of hot sauce or ketchup on the Egg White and Turkey Sausage variety.
